P\u00e5 panden svitser du den opt\u00f8et spinat. \u00c6ggene piskes sammen og fl\u00f8den tils\u00e6ttes sammen med saltet og peberen.<\/p>\n<p>H\u00e6ld \u00e6ggeblandingen p\u00e5 panden og lad den s\u00e6ttes sig i et par minutter til den er fast (den skal stadig v\u00e6re fast p\u00e5 oversiden)<\/p>\n<p>Mozzarellaen og fersken sk\u00e6res i skiver og l\u00e6gges oven p\u00e5 omeletten.
